From Charcuterie to Crawfish: Our Culinary Adventure in the Louisiana Bayou

Our journey through the heart of Cajun country was not just a feast for the palate but also for the soul. Here’s a small taste of our unforgettable culinary expedition.

A Flavorful Start in New Orleans

Our adventure began in the vibrant streets of New Orleans, where we met up with Chef Bob August, a co-sponsor of the charcuterie contest, and his media partner, Brandon. Our first stop? The iconic Café du Monde. Their beignets, dusted with snowy powdered sugar, were the perfect sweet start to our savory journey. Fueled by these sugary delights, we were ready to head to the bayou.

Morgan City Magic

In Morgan City, our first bayou stop, we were greeted by Erik Lind, President of GJ Curbside and fellow charcuterie contest winner. Erik gave us a behind-the-scenes tour of his establishment GJ, which was something we never realized existed. Alongside Chef Bob and Brandon, we cooked an incredible meal at the GJ Curbside warehouse. From succulent pork chops and spiced shrimp with orzo to savory lamb chops and a unique smoked bourbon ice cream, each dish was a revelation. The evening concluded with local drinks, live music, shared stories, and a stunning sunset that painted the sky in hues of orange and pink. It was a special evening that came together so amazingly.

A Night to Remember

Our first night in the bayou was graciously hosted by Scott Green, the owner of DAT Sauce. His home was as warm and welcoming as his hospitality. After a restful sleep, we awoke to the sweet scent of fresh oranges picked right from the trees, ready to pack up for a deeper dive into the bayou.

True Bayou Living

A boat ride took us further into the heart of bayou life at Scott’s residence for two more nights. Here, we experienced scenes straight out of 'Naked and Afraid' and learned about the curious nutria rats, even participating in a nutria hunt with Scott himself. Our days were filled with setting traps for crawfish, indulging in a seafood boil, and stewing freshly caught crawfish. Fishing and meeting the locals offered us a glimpse into the daily lives of those who call the bayou home.

Cultural Connections

One of the most memorable moments was an impromptu live music concert performed by friends of Scott. Surrounded by new friends and enveloped in the lively tunes of the bayou, we truly understood the deep cultural connections in this unique region.

Our trip was more than just a culinary tour; it was an immersion into the heart of Cajun culture, filled with new friendships and rich experiences. Every meal shared, every story told, and every sunset witnessed together made this not just a trip, but a transformational journey. The bayou left its mark on us, just as we left our footprints along its winding waters.
